Candied Limes

These are fun little embellishment to add the finishing touch to your key lime pie slices. And, they’re super easy to make.

2 key limes, halved and sliced into about ¼ inch slices
½ cup water
¾ cup sugar
Super-fine (not powdered) sugar for  for dusting

Step 1 – Heat water in small saucepan or frying pan until just boiling.

Step 2 – Add lime slices and boil gently for 5 minutes.

Step 3 – Add sugar and gently stir until just dissolved. Boil 5 more minutes, being very careful not to let sugar mixture burn.

Step 4 – Remove slices from pan with slotted spoon or fork and place on wax paper. Lightly sprinkle with super-fine sugar and gently turn over to sprinkle the other side. Allow to cool completely. Store in an airtight container.

To serve with key lime pie, cut pie into 10 equal pieces, put a dollop of whipped cream on top of each slice and garnish with a candied lime slice.
