Gluten-Free Chocolate Peanut Butter Fudge

A decadent twist on traditional fudge, the peanut butter makes them extra rich and extra delicious! I dare you to stop at just one.

4 cups of sugar
2 sticks of butter
1 cup evaporated milk
3 cups gluten-free chocolate chips (I used milk chocolate)
1 7-ounce jar of marshmallow cream
1 teaspoon vanilla extract
1 cup peanut butter


Step 1 – In a double-boiler, melt sugar, butter and evaporated milk. Heat until a candy thermometer registers 230 degrees Fahrenheit.

Step 2 – Remove from heat and add vanilla, marshmallow cream and chocolate chips. Stir until chocolate is melted and marshmallow cream is well combined. Add peanut butter and stir to swirl into the fudge, but not thoroughly combined.

Step 3 –Spray a glass 13×9-inch baking pan with non-stick cooking spray. Pour fudge into prepared pan. Refrigerate until firm. Cut into 1-inch squares.

Makes: Approximately 9 dozen squares
